A wonderful recipe for making pumpkin rice, a dish I first had a few years back while on vacation in Barbados. This pumpkin rice recipe is true to it's Caribbean roots and can be found on just about all the beautiful islands which make up the Caribbean. Not only is this a very tasty rice dish, it's fully vegetarian as well.
