Chicken Broccoli Recipe - Chinese Food with Candied Almonds Ingredients: 1 chicken breast chopped into 1/2 inch pieces marinated in 1 teaspoon cooking wine and 1/2 teaspoon sugar 1 cup broccoli crowns 1/4 cup sliced almonds 2 tablespoons sugar 10 dried red chili peppers 3 cloves minced garlic 1 teaspoon minced ginger 1/8 teaspoon sesame oil 2 green onions chopped 1 tablespoon oil for cooking Sauce: 2 tablespoons hoisin sauce 2 tablespoons plum sauce 1 tablespoon oyster sauce Preparation: 1. Heat wok to medium, add almonds. 2. Add sugar to almonds, remove as soon as smoke appears 3. Add peppers to cooking oil, remove when brown and crispy 4. Turn up heat to high and add chicken, remove when 2/3 done 5. Add broccoli, stir then add sauce 6. Add chicken, peppers, onions and almonds, and sesame oil stir until cooked

Pork and Shrimp Shumai Recipe - Steamed Chinese Dumpling, Dim Sum Ingredients: 1 package Goyza wrappers (round) Filling: 1/2 pound ground pork 3 chopped large shrimp 1 chopped shiitake mushroom 1 shallot minced 1 teaspoon minced ginger 2 teaspoons oyster sauce 1 teaspoon rice wine 1/8 teaspoon sesame oil 1/4 teaspoon sugar Sauce: 2 tablespoons soy sauce 1 teaspoon garlic chili sauce Preparation: 1. Combine all ingredients for filling 2. Add 2 teaspoons filling to wet wrapper 3. Fold in edges in eighths 4. Steam on boiling water for 10 minutes 5. Mix ingredients for sauce and serve hot Makes about one dozen. HINT: Pack wrappers full of fulling, without air. Seal at the top otherwise they will unravel during cooking.
