Rapure - A traditional Acadian method of cooking with game meat. Sometimes referred to in English as "Rappie Pie" is a traditional Acadian dish made from potatoes from which the starch have been removed, reconstituted with meat broth, then baked in the oven until golden brown. In this photo is the finished pheasant rapure, served with pickled root beet and solomon gundy (pickled herring).
