Unfortunately, jello is high in sugar so the only way to make it "healthier" is if you use low-sugar fruit juice in replacement of the jello gelatin. Here refrigerated and melted semi-sweet chocolate is used for the center of these cookies. If the chocolate is refrigerated first, it will be easier to scoop and the dough would be easier to fold. The store-bought kinds are smaller and higher in fat, cholesterol, etc. If you make them yourself, you can even draw Hello Kitty on top instead of Hello Panda!
