Birthday Cupcakes with Grandson Carter Recipe Cookery Show

In this video, Betty demonstrates how to help a child enjoy cooking by helping her grandson, Carter, make cupcakes for his birthday. Carter is 4 years old today, and he will be celebrating his birthday with his classmates at school today. Carter needed to bring 2 dozen cupcakes for the students and teachers, so I made those, but I made enough batter for Carter to "play" at making and decorating 2 dozen more. My suggestion is that when you are making something like cupcakes with a child of Carter's age, that you purchase cake mix(es), ready-to-spread frosting, and candy sprinkles. You should do any work with an electric mixer, and have the batter ready before involving the child. Then, you can let the child stir the batter, perhaps spoon some of the batter into baking cups, spread the frosting, and decorate the cupcakes with sprinkles. We decided to make one of the batches by putting a layer of chocolate batter on the bottom and a layer of yellow batter over it, and then using a small knife to "marble" it. You need to handle all of the putting in and getting out of the oven yourself, and be sure to put away sharp knifes, or other instruments. This can be a fun learning experience for the child, but don't expect the child to do everything perfectly! (I do want to mention that I stated a couple of times that I was using a teaspoon for dipping the batter, when actually it was a tablespoon!) Carter and I had a great time finishing our cupcakes after the end of shooting this video, and our family had a little birthday party after dinner last night where we ate "his" cupcakes and opened his present from Rick and me--a Big Wheel! Cream Cheese Frosting Recipe Cookery Show

In a *large* bowl, use a fork to mash 1 cup butter and (2) 8-oz. blocks of cream cheese together. Then, use an electric mixer to beat thoroughly. Stir in 2 tablespoons of vanilla extract. Add 2 pounds of confectioner's sugar, a little at a time. Stir in each addition, and then beat it with a mixer. Continue until all of the 2 pounds of confectioner's sugar is incorporated into the frosting mixture. Beat the entire mixture, until it is very smooth. Cover with plastic wrap, and refrigerate for a couple of hours before spreading it on a cooled cake or on cupcakes. This is one of the most delicious and versatile frostings that you can find! Red Applesauce Mold Valentine's Day Recipe Coockery Show

Dissolve 1 large package of cherry Jello in 2 cups of boiling water, along with 3/4 cup red hot cinnamon candy. Cool some. Add 2 cups applesauce, and stir to combine completely. Pour gelatin mixture into a clear bowl, or a Valentine heart mold. (You may unmold the Jello on a flat plate, or just serve it from the mold or serving bowl.) This is a romantic additon to a special dinner! Happy Valentine's Day!

Mini Corn Dogs Recipe Coockery Show

In a medium-sized mixing bowl, beat 1 egg until well-beaten. Add ½ cup cornmeal, ½ cup all-purpose flour, 1 teaspoon salt, ½ teaspoon black pepper, ½ cup milk, and 2 tablespoons melted butter. Stir with a spoon to combine mixture, and then beat with an electric mixer until smooth. With tongs, dip Lit'l Smokies into batter, one at a time, and place on a rack to drain. Heat about 1-inch of peanut oil in a heavy pot on the stove until it reaches 350 degrees. With tongs, gently drop individual coated mini corn dogs into hot oil and fry until golden brown, about 2 minutes. As individual corn dogs get done, remove them from the hot oil and drain them on a platter that has been covered with paper toweling to drain. When all corn dogs are fried and drained, place them on a nice serving platter with a small cup of honey mustard in the middle for dipping. This is a really popular recipe, and I hope you can use it for your parties!
