Chicken Stew Recipe Coockery Show
Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf, and thyme. Add the chicken breasts; press to submerge. Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes. Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite- size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste. Ladle the stew into serving bowls and serve with the bread.

Chicken Chutney Cheese Ball Recipe
In a medium-sized mixing bowl, combine 8-oz. cream cheese, 1 cup chopped cooked chicken, ½ cup chopped pecans, ¼ cup mayonnaise, 2 tablespoons chutney, and 1 tablespoon curry powder. Stir well. Cover with plastic wrap and refrigerate for at least 30 minutes. Form into a ball and place on a serving dish. (You may roll in extra chopped pecans, if you choose.) Serve with assorted crackers. This is a wholesome appetizer/snack that I think you will enjoy. It is a great cheese ball to serve at a party, and with the Super Bowl and other sporting events coming up, a lot of you are looking for new snacks that are hearty and healthy. 1)Heat oil in a pan. 2)Splutter cumin seeds and mustard seeds. 3)Add chopped onions and green chillies and saute, till they turn golden brown. 4)Add turmeric powder, coriander powder and leave it for a sec. 5)Add potatoes and mix well. 6)Cover and cook, until potatoes are partly cooked. 7)Add cauliflower and peas and stir it well with little salt. :- Add salt only for vegetables. 8)Cover and let it cook. 9)When it is cooked, add boiled rice and mix well. 10)Add salt, garam masala and coriander leaves. :- You have already added salt to vegetables, so add very little for the rice. 11)Mix well and cover it for 4 - 5 min before you serve.
